Banana Blossom Patties – I have a friend who is a vegetarian. Now, I don’t have anything against them, but I couldn’t really imagine living the rest of my life without ever eating chicken, fish, pork and beef.

However, as much as I love meat, I am also very intrigued by the vegetarians’ lifestyle, so one day I finally decided to give it a try. I agreed to have lunch with her. I told her to go easy on me and not go overboard with the vegetables.

As far as burgers go, this looked like one. When I took a bite, I was surprised. I thought it’d taste funny and tofu-like, but it was different. Asked her what it was and she told me it was Banana Blossom Patties.

Ginisang Munggo Recipe: How to Cook Ginisang Monggo with Pork and Puso ng Saging (Banana Blossoms): Have you ever wondered why in the Philippines, people would normally cook and eat ginisang munggo or monggo on a Friday? It has become a part of Philippine culture – almost like a tradition even – that every Friday, you’ll see all the carinderias serve steaming pots of ginisang munggo during lunch.

I’ve learned that this stems from the Catholic belief that one should avoid eating any kind of meat on Good Friday. With munggo being one of the most affordable vegetables in the market, ginisang monggo has become the go-to dish during Lenten Season. This has become a norm to the point that even on a regular Friday, Filipinos have become used to eating ginisang munggo – which has now evolved to several varieties, such as ginisang munggo with dilis, ginisang monggo with tinapa, monggo with kalabasa or malunggay, or my favorite – ginisang munggo with pork and puso ng saging.

The banana blossom (or literally the heart of the banana) is an ingredient that is sold at cheap prices, it is also abundant in the Philippines. Banana trees are one of the most useful trees to ever exist.

The more well-known ways to cook banana blossom is by making them into adobo (a traditional Filipino style of cooking) and ginataan or gata (cooking in a coconut-milk based sauce).

But kids are not too fond of those styles of cooking, they would rather eat something that is fried and can be dipped in ketchup. This leads to Filipino parents thinking of ways to make their children eat healthily and enjoy the food at the same time.

For this torta dish, it is nothing new for the Filipinos. They are already aware of possibly using vegetables for the method of cooking. The banana heart just happened to be the next healthy and affordable ingredient they have thought of.
