For some who are not familiar with the banana blossom, it is the teardrop-shaped purple flower at the end of the banana fruit cluster. This is usually used in Southeast Asian and Indian cooking. There are different ways of cooking banana blossom in the Philippines. Some cook it with coconut milk and others stewed in vinegar. This recipe calls for stewing the banana blossom in vinegar. And to make the dish more enjoyable, I added some slices of squid making it a tasteful dish. A recipe to impress friends when they come over!
You can also experiment and add the banana blossom to other dishes like for instance Kare-Kare. This ingredient can also be a healthy substitute for meat like in making burger patties, “veggie” (meat) balls and more. Before you proceed in the cooking process, make sure that you prepare the blossoms accordingly by removing the sap (dagta).

How to Cook Banana Blossom Patties

- 2-3 pieces medium sized tomatoes
- 1 large onion
- 4-5 Cloves of garlic
- 1-2 cups (about 500g) of munggo / monggo
- 300g of sliced pork (or more if you prefer a meatier dish)
- 1-2 cups of puso ng saging (banana blossoms)
- 2 cups coconut milk
- 1 piece pork broth cube
- Salt, pepper, and seasonings
- 2-3 tablespoons patis (fish sauce)
- 2-3 cups of water
- Crushed chicharon
How to Clean, Prepare and Cook Puso ng Saging
- Peel off and discard the outer layers of the banana blossom.
- Slice the banana blossom into thin pieces.
- Soak in a mixture of salt and vinegar for 15 minutes.
- Wring the soaked banana blossom to squeeze out the vinegar and sap.
Ginisang Munggo Recipe Procedure:
- Wash the munggo with clean water in a pot, then drain. Set aside.
- Saute the chopped garlic and onion.
- Add pork slices
- Add 2-3 sliced tomatoes
- Pour 3-4 cups of water.
- Add 1 pork broth cube.
- Add the munggo and simmer until the monggo is cooked.
- Add more water if needed.
- When the munggo is soft (but not mushy!), add the puso ng saging (banana blossoms).
- Pour 2 cups of coconut milk
- Add patis, salt, and pepper to taste.
- Top with crushed pork chicharron. Serve hot.

Kilawing Puso ng Saging Recipe
- 1 Tbsp oil
- 2 tsp minced garlic
- 1 small onion – sliced
- 1 puso ng saging (banana heart) – about 500 gm
- 125 g cooked shelled clams/mussels – roughly chopped or flaked canned tuna
- 3/4 cup vinegar
- 1 1/2 cup water or shrimp juice*
- salt and pepper to taste
- Unwrap the banana heart (see above left) until you get to the mainly white part (see above right). Cut off the stem part and discard together with the skin that you unwrapped.
- Put 8 cups of water in a large bowl and add around 3 Tbsp salt. Make sure salt is dissolved in the water.
- Slice the banana heart into 1/2 inch thick pieces. As you slice, immediately put them in the bowl of salted water. This is to prevent them from turning black. Set aside.
- Heat oil in a saucepan. Saute garlic and onion.
- Add in the clams or mussels meat. Season with salt and pepper according to taste. Cook for about 2-3 minutes on medium heat.
- Add in vinegar and water, bring to boil.
- Drain the banana heart and squeeze out excess water.
- Stir in the the banana heart into the saucepan. Simmer until fully cooked – about 5-10 minutes.
- Remove from heat and serve.
Note: For the shrimp juice – mash heads and shells of fresh shrimps with mortar and pestle; mix well in water then strain. Discard shrimp shells.

- Slice crosswise. If you’re not using it immediately, to avoid discoloration, soak in cold salted water.
- Sprinkle rock salt over the sliced banana heart and massage the pieces with your hands for about 5 minutes.
- Soak the slices in salt water for 10 minutes.
- Then squeeze until most of the liquid had been drained out and drain the sliced banana heart using a strainer.
- Rinse in cold tap water and set aside to drain.

How To Cook Kinilaw na Puso ng Saging:
1.) In a bowl, pour in water then add salt. Add your sliced or shredded banana blossom. Squeeze the banana blossoms in order to remove any remaining sap. Soak for 20 minutes . Squeeze it once more. Drain then set it aside.
2.) In the saute pan, pour a bit of cooking oil and heat it up. Add in the tomatoes, garlic and onion then sauté. Add the shrimp or pork (whichever you chose). Sauté over high heat. Continue doing so until the ingredients are cooked.
3.) Pour in the banana blossoms and siling labuyo. Stir it well.
4.) Pour in the vinegar and water. Allow it to boil. DO NOT stir.
5.) Allow it to boil until the banana blossoms become soft. If the water is not enough, you can add more. Season the mixture with salt and pepper.
6.) Once there is no liquid anymore in the pan, add in the sotanghon. Stir it well. Then remove pan from heat.
